Broccoli Cheddar Jalapeño Pot Pie with Jalapeño Cornbread Topping

The BEST Comfort Upgrade: Broccoli Cheddar Chicken Pot Pie with Jalapeño Cornbread Crust

When craving pure, unadulterated comfort food, a classic pot pie always delivers. But sometimes, standard pie crust just isn’t enough. Driven by a desire for the ultimate comforting dinner, I created this epic mashup: Broccoli Cheddar Chicken Pot Pie topped with a Golden Jalapeño Cornbread Crust.

It hits every single craving—rich, savory, creamy, with just the right touch of heat and sweet. When I tell you this dish is good… trust me. It is THAT GOOD.

Why You’ll Fall in Love

Rich, Creamy & Savory Base

The base delivers all the cozy warmth of a classic broccoli cheddar soup, but elevated. You get the deep, savory warmth from cooked chicken broth and sweet aromatic onions and carrots, anchored by a rich garlic-and-rosemary backbone. The sharp cheddar and nutty freshly-rated parmesan melt seamlessly into whole milk, creating a velvety sauce that coats every piece of tender chicken and broccoli.

Mild Heat with Fresh Punch

Rather than burning your mouth, the diced jalapeños in the filling cook down to add a subtle, warm background hum that cuts right through the heavy creaminess. Then, when you bite into one of the fresh jalapeño slices baked right into the top crust, you get a bright, crisp pop of fresh heat that keeps every scoop feeling lively and dynamic.

Golden Sweetness & Buttery Goodness

This is where the magic happens. The cornbread topping brings a beautiful element of natural sweet corn, rich buttermilk tang, and honey. That sweet-savory balance hits its peak when the hot honey butter soaks into the top layer right out of the oven.

🧂 The Crunchy, Flaky Finish

Finally, that light sprinkle of flaky sea salt on top acts like a contrast dial—it makes the sweet honey pop, amplifies the sharp cheddar, and ties the spicy, savory, and sweet layers together into one perfectly balanced bite.

It’s rich, sharp, sweet, salty, and warm all at once!

  • 3 garlic cloves, minced
  • ½ teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tsp dried parsley or 1 tbsp fresh parsley
  • 1 teaspoon dried rosemary
  • 4 tablespoons unsalted butter
  • 1/3 cup all-purpose flour
  • 18 oz chicken broth (depending on how thick you want your filling to be)
  • 1 cup whole milk
  • 1/4 cup parmesan, freshly grated
  • 1/2 cup cheddar cheese, shredded
  • 2 medium chicken breasts, cooked and shredded
  • 4 cups broccoli florets, roughly chopped up small

For the Jalapeño Cornbread Topping:

  • 1 1/4 cups yellow cornmeal
  • 1 1/4 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 1/4 tsp baking powder
  • 1 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 1/4 cups buttermilk
  • 1 large egg
  • 3/4 cup unsalted melted butter
  • 3 Tbsp honey
  • 1 1/4 cups shredded sharp cheddar cheese
  • 1-2 Jalapenos, thinly sliced

Honey Butter Topping:

  • 2 tbsp melted butter
  • 1 tbsp honey

Instructions:

Make the Broccoli Cheddar Chicken Filling:

  1. Preheat the oven at 400F.
  2. Heat a 7 quart large pot over medium high heat. Add the oil. Then add in the onions, carrots, and diced jalapeños and cook for about 6 minutes until they are soft.
  3. Stir in the garlic, herbs, salt, and pepper and cook for about 30 seconds until fragrant.
  4. Add in the butter and melt it into the mixture.
  5. Sprinkle in the flour and stir and cook for about 1 minute.
  6. Pour in the chicken stock a little at a time until combined in the soup.
  7. Then pour in the whole milk.
  8. Add the broccoli and a large pinch each of salt and pepper. Bring to a simmer, reduce the heat to medium. Cook uncovered until the broccoli is tender, about 10 minutes.
  9. Add in the cheeses and the shredded chicken breast. Stir until the cheese has melted.

Make the Jalapeño Cornbread Crust:

  1. In a medium mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
  2. In large mixing bowl, whisk together the melted butter, honey, egg, and the buttermilk.
  3. Add in the dry ingredients and stir just until combined. Do not overmix!
  4. Then fold in the cheese.

Assemble and Bake:

  1. Drop large spoonfuls of the jalapeño cornbread batter evenly over the filling and gently spread to cover the surface. Place some freshly sliced jalapeños on top of the cornbread layer.
  2. Bake for about 30 minutes. Then lightly cover the top with a piece of aluminum foil and continue baking for 15-20 minutes or until a toothpick inserted into the cornbread comes out clean with no raw batter stuck to it.
  3. Take the pot out of the oven and brush the top with the honey butter and sprinkle with some flaky sea salt.
  4. Cool off the dish at room temperature for about 15 minutes before scooping and serving.
  5. Enjoy!
