French Onion Chicken Pot Pie

The BEST Comfort Food: French Onion Chicken Pot Pie

If French onion soup and chicken pot pie had a baby, this would be its glorious, cheese-draped crowning achievement.

We are officially entering cozy dish season, and there is nothing better than a meal that warms you up from the inside out. When the weather crispens up, my kitchen cravings split down the middle: part of me wants a rich, savory bowl of classic French onion soup with its deep, jammy, caramelized notes and molten Gruyère. The other part craves the rustic, belly-warming nostalgia of a traditional chicken pot pie packed with tender veggies and a buttery crust.

So, why choose between two absolute legends when you can fuse them into one showstopping crossover?

This French Onion Chicken Pot Pie hits every single comfort food high note. We take deeply caramelized onions, simmer them in a rich beef broth and white wine gravy, toss in tender shredded chicken and sweet peas, and smother the whole thing in melted Gruyère cheese. Then, instead of a standard heavy pie crust, we top it all off with a geometric mosaic of golden, shattered-crisp puff pastry squares. It gives you that perfect, satisfying crunch in every single bite without getting soggy underneath.

Here’s the real secret: while this dish looks, smells, and tastes like something you slaved over for four hours in a French bistro, it is shockingly simple to pull off at home. Most of the time is totally hands-off while your onions slowly transform into sweet, savory gold. Toss in a few genius shortcuts—like using a store-bought rotisserie chicken—and you’ve got an ultra-luxurious weeknight dinner that feels like a special event.

Grab a wooden spoon, turn on your favorite playlist, and let’s make the ultimate cool-weather comfort dinner.

Serves about 6

Ingredients:

  • 3 tbsp olive oil
  • 3 medium (2 1/2 cups) yellow onion, thinly sliced
  • 1/2 tsp salt
  • 1 tsp sugar
  • 6 cloves garlic minced
  • 2 carrots, diced
  • 1 tablespoon fresh thyme leaves or ½ teaspoon dried thyme
  • 1/2 cup dry white wine
  • 1/4 cup all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • ½ cup whole milk
  • 1 1/2 cups shredded gruyere cheese, divided
  • 2 cups shredded cooked chicken
  • 1 ¼ cups frozen peas (do not thaw)
  • Salt and pepper to taste
  • 1 sheet frozen puff pastry, thawed
  • 1 large egg beaten + 1 tablespoon water (for egg wash)
  • fresh thyme
  • fresh parsley

Instructions :

  1. Preheat the oven to 400 degrees.
  2. Heat a large shallow pot over medium heat. Add in the olive oil and then add in the onions, salt, and sugar and stir/cook on medium heat for 30 minutes until deeply brown caramelized.
  3. Add in the carrots, fresh thyme, and garlic and cook for about 1 minute until fragrant.
  4. Deglaze the pot with the dry white wine and continue to cook until the liquid reduces by half.
  5. Sprinkle in the flour in and continue to cook for about 1 minute to create a roux.
  6. Then slowly pour in the beef broth, stirring constantly to avoid lumps. Continue to cook until the sauce thickens and coats the back of a spoon.
  7. Then add in the whole milk and Worcestershire sauce and simmer the sauce until it thickens again.
  8. Turn off the heat and stir in 1 cup of gruyere cheese and stir until the cheese has melted. Then add in the shredded cooked chicken and frozen peas. Season generously with salt and pepper to taste.
  9. Sprinkle the remaining gruyere cheese on top of the pot pie.
  10. On a lightly floured surface, gently roll out the puff pastry and cut into 2 inch equal squares. Arrange the puff pastry squares on top of the pie.
  11. Brush the top with some egg wash and then place the entire pot on top of a baking sheet in case anything drips. Bake for about 30 minutes, or until the puff pastry is golden brown and crisp on top.
  12. Garnish with fresh thyme and parsley and serve while it’s still hot!
