Crab Rangoon Baked Mac and Cheese

Serves 8-10
Ingredients:
For the Crab Rangoon Filling:
- 12 oz imitation crab meat, unwrapped and chopped
- 4 ounce block of cream cheese, softened
- 1/4 cup sour cream
- 4 scallions, thinly chopped
- 1/2 tablespoon Worcestershire sauce
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
For the Mac and Cheese:
- 1 lb macaroni pasta
- 3 tbsp butter
- 4 Garlic cloves, minced
- 1/2 onion, small diced
- 3 tbsp All purpose flour
- 1 cup Heavy cream, warmed
- 1 1/4-1 1/2 cups whole milk, warmed
- 12 oz can Evaporated milk, warmed
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp chicken bouillon powder
- 1 tsp Paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 6 oz Sharp cheddar cheese, Freshly shredded, and divided
- 6 oz Gouda or Colby Jack Cheese Freshly shredded, and divided
- 8 oz mozzarella cheese, shredded, and divided
- Crab Rangoon Filling from above
For Garnish:
- Sweet Thai Chili Sauce
- Chopped green onions
Instructions:
Make the Crab Rangoon Filling:
- In a medium bowl, mix together the chopped imitation crab, cream cheese, sour cream, scallions, garlic powder, chili powder, salt, and the Worcestershire sauce. Set the mixture aside.
Make the Mac and Cheese:
- Preheat the oven to 400F.
- Grate all of the cheese blocks and separate the shredded cheeses in HALF and place them into two large bowls and set aside. One half will be cooked into the sauce and the other half will be layered in your casserole dish.
- Bring a large pot of salted water to a boil. Add in the macaroni pasta and cook according to package directions until al dente (usually about 8 minutes). Drain the pasta and set aside.
- In a large pot, melt the butter over medium heat.
- Add in the onion and cook for about 5 minutes until fragrant and the onions are translucent.
- Once melted, add HALF of the seasoning mixture (smoked paprika, chicken bouillon, garlic powder, onion powder) and the finely chopped garlic and cook for 1 minute.
- Add in the flour one tablespoon at a time and whisk it into the butter mixture each time until smooth. Cook for 1-2 minutes, stirring constantly, to form a roux. Be careful not to let it brown too much.
- Gradually add in the warmed evaporated milk to the roux, whisking constantly to avoid lumps. Add in the heavy cream and milk and continue to cook and whisk until the mixture thickens (about 5 minutes).
- Stir in the remaining seasonings, the smoked paprika, chicken bouillon, garlic powder, onion powder, salt, and pepper.
- Then add in HALF of the grated cheeses.
- Cook on low until the cheese has melted.
- If its too thick, add in some reserved pasta water if needed.
- Add back in cooked pasta noodles and add in HALF of the crab rangoon filling.
- Pour half of the pasta in a deep casserole dish and top with some of the remaining shredded cheese and top and the remaining crab rangoon filling. Then top with the remaining pasta and garnish with more shredded cheese.
- Bake at 400F for about 20 minutes or until the cheese on top is golden brown.
- Serve with sweet chili sauce and garnish with green onions. Serve warm and enjoy!
