Makes One, 9×5 inch Loaf
Ingredients:
- 1¾ cups (210g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 2 teaspoons pumpkin spice
- 1⅓ cups (300g) pumpkin puree
- 3/4 cup (150g) granulated sugar
- 1/2 cup (100g) brown sugar
- 3/4 cup (180g) vegetable oil
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan with nonstick cooking spray or butter, then lightly dust with flour (or line with parchment paper for easy removal).
- In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and the pumpkin spice. Set this bowl aside.
- In a large bowl, mix together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs (room temperature), and the vanilla extract. Whisk vigorously until smooth and completely combined.
